Mealthy Tip

Look for bell peppers that are large in size so you have a bigger area to work with when carving out the jack-o-lantern faces. Buy some extra peppers just in case your first try is unsuccessful. You can always cut up that pepper and add it to your veggie tray.

So much fun making this recipe for my nieces and nephews! Such a cool idea and easy to prepare. I had never thought to make avocado dip (other than guac) so this was a easy way to try something new!

Great snack idea for all ages! I'm just starting to love Greek yogurt, and was really pleased with this recipe. I played around with the herbs, and used only 1 tablespoon parsley. Simple, easy to make and cool presentation. Five stars!

I made bell pepper jack-o-lanterns last year, but they were stuffed with rice! I definitely prefer this concept with avocado and yogurt dip instead, especially for entertaining guests. When I saw this video using the peppers as serving bowls, I had to try it! I made both recipes for a company Halloween-themed lunch and they were the most popular item at the party. The yogurt dip is great, the chives and parsley give it wonderful flavor. The avocado dip is also very good. I'm glad that it's not guacamole, but instead an herbed avo dip. I plan to make both of these recipes again!
